I've been reading Three Bags Full by Leonie Swann. It's a murder mystery but the protagonists are sheep whose shepherd has been killed grin I'm only a little ways in but I think the characterization of the sheep is really quite delightful and complex. The border collie is a minor character.

It's a fun, light read. Not really sure how accurate her descriptions are, but it seems like she did her research.

I keep meaning to check that out. It went the rounds way back when I first got into sheep and II can't tell you how many people said I just HAD to read it. I have a contrary personality so I think subconsciously I said, "Well, I just WON'T then." Silly, I know.
